Why? Weekends!

Aside from ribs, it was a busy and fun holiday weekend! On Friday evening, I had a craving for margaritas and eating my body weight in chips and salsa. Matthew and I found ourselves at Don Tequila for an easy-breezy Mexican meal.

Saturday morning started as most do, with a yoga class at Harmony Yoga. Stay tuned this week for some deeper reflections on my practice, but it was the perfect way to start the day!

Saturday afternoon, we headed to Clark’s house for a 40th birthday extravaganza, filled with Fresh Fork goodies. Trevor from Fresh Fork arrived with a 150-pound roasted pig, which he proceeded to carve and serve right at the party!

If you ever have the opportunity to attend a pig roast, definitely take advantage. The meat is tender and delicious!

Clark not only makes a lot of the delicious sauces you get in your Fresh Fork bag, but he announced at the party he will be launching his catering business full-time this year. It’s awesome to see someone pursue something they love (and are so good at). It was a wonderful birthday celebration!

Sunday, Matthew and I went to my parents’ house for a BBQ and this season’s debut of my favorite summertime beverage: Prosecco sangria! I seriously could drink this all summer long!

Matthew also made another summertime favorite: blueberry pie, which he paired with homemade ginger vanilla ice cream. Delicious!

My parents also surprised us with an early anniversary present: a Vitamix! I have heard so many great things about Vitamix, plus it’s a local company! I cannot wait to try out this new addition to our kitchen.

Yesterday brought more yoga and just kicking around the house enjoying a day off from work.

How was your holiday weekend? Do you have a Vitamix? Any recommended recipes for it?

  1. Sounds like a great weekend!

I love my Vitamix. Mainly I make smoothies in it or juices, but lately I have made tomato soup, salsa, guacamole, V8 juice, sorbet and pizza dough!

saw that you dined in Willoughby— over in eastlake by the Captain’s stadium (on the same side as Chase by the drive-thru convenient – it is easy to overlook) there is a newer mexican restaurant, El Palenque that has opened. They have delicious food/margs and they even have drink specials on Saturdays along with occasional live music and visibility of the fireworks during the firework’s night at Captain Stadium from the parking lot. Heard about this little gem from word of mouth and haven’t dined elsewhere for mexican in the 440 since.
